Demi, who joined the club in the summer of 2024, has made 49 appearances across her two seasons on Tyneside.
The 34-year-old was appointed as captain at the start of the 2025/26 season.
On signing her new contract, Demi said: “I’m very happy. I always say that you don’t take these moments for granted especially as I’m not getting any younger.
“I’m very proud of my career, but I think to help Newcastle get promoted would just top it off, it’s something I always said I wanted to achieve with the club.”
Manager Tanya Oxtoby added: “Demi’s experience and leadership skills speak for themselves, and we are really pleased that she has signed a new contract.
“She helps to drive the standards every day on and off the pitch and understands what it means to represent this club.”
